Rib’n’Mac launched in Tooting this Spring, with a menu inspired by the tastes and flavours of Tooting. One new flavour being introduced to Tooting in their menu are Summer Black Truffles. Normally reserved for the menus of high-end Central London restaurants, founder Zamir Cajee is keen to broaden their appeal “We are not using truffle oil, we use real truffle in our recipes… Our food is not stuffy, it is comforting and full of flavour, just like Tooting.” With truffle dishes for under £10 they are also dispelling the myth that truffles are exclusively for high-end expensive restaurants.
Cajee explains how his passion for this ingredient started “I was introduced to truffles in Italy, the home of truffles. Restaurant owners in Italy often forage for truffles themselves, so they aren’t paying exorbitant prices. Truffles can’t be farmed, they simply grow in the wild and are completely seasonal, which is why they are scarce and have become associated with high-end expensive restaurants. In Italy they are enjoyed with simple dishes, liberally grated over pasta, and celebrated for their flavour. They are often confused with mushrooms, but have a completely unique taste, that has to be experienced.”
Cajee brings this philosophy of simple, fresh and flavourful cooking, from the home of the truffle. Introducing this often-misunderstood ingredient to his cooking in his South London restaurant. He serves truffles with Italian macaroni pasta and a British Cheddar cheese sauce, he also combines it with French Mayonnaise to dip their super crispy fries in. Rib’n’Mac is now delivering their truffle dishes across Tooting every Thursday, Friday and Saturday evening. Judging by the feedback Tooting is rapidly embracing the truffle, as it already has done with so many flavours from around the world.
